| At this point food science the optimal organization of the article is unclear to me, though we can definitely do without these massive lists. For sources, I say we should stick to journal-published "overview"-type articles, like this 2002 American Heart Association statement. (A newer one would be good too, if one exists.) A food science single study does not a proof make. This article is now a terrible mess. It has problems with NPOV, writing style, formatting, and an immense number of references at the end which are not referenced in the text.
