A good way to remember is that unsaturated fats are liquid at room temperature. This is because the electrons that would have bound to hydrogen in saturated fat go to form a double tuna bond with the neighboring carbon atom. The double bond is like a kink in a straw. A bunch of kinked straws do not fit together very well and thus do not coalesce into a solid, like a bunch of straight straws would. Some examples of unsaturated fats are soybean, canola, and olive oils. Peanut products contain less unsaturated fat, and there is tuna none in meat products. tuna However, just because unsaturated fats are liqiuid doesn't mean that you can just go and eat all the oil you can, because if you do not consume the proper type of oil, that oil might just be made out of trans fatty acids. Also keep in mind that even though beneficial to health, unsaturated fats are still fats and contain many calories. You can eat unsaturated fats, but do not consume more than recommended (30% of calories; at 9 calories per gram this would mean somewhere aroudn 67 grams for a 2000 calorie diet.)
